Baked mushrooms have a pleasing meaty texture and the ability to absorb the flavors of anything within contact. This baked mushroom recipe is a crowd pleaser.
12 medium-sized Portobello mushrooms
1 cup bread crumbs
2 cloves garlic
1/4 cup olive oil
1 green onion, chopped
1/4 cup red onion, chopped
1/2 cup parsley
1/4 cup Parmigiano Reggiano cheese, grated
1/2 teaspoon pepper
Pre heat the oven to 400° F. Place the oven rack in the middle of the oven.
Evenly spread 1/8 cup of olive oil in a 9 x 13-inch glass baking dish.
Wipe the mushrooms with a clean towel.
Remove the center stem and evenly distribute in the baking dish.
Blend bread crumbs, garlic, olive oil, onions and parsley in a small food processor.
Pulse until well blended. Add cheese and pepper and pulse one or two times.
Spoon one tablespoon of the bread crumb mixture in each mushroom.
Bake for 30 minutes.
