Cranberry orange relish is a delicious addition to a holiday supper. Stock up during cranberry season, store bags of cranberries in the freezer and serve this tasty side dish year-round.
1 unpeeled orange, cut into eighths and seeded
1 12-ounce package cranberries, rinsed and drained
3/4 to 1 cup sugar
Place half the cranberries and half the orange slices in food processor.
Process until mixture is evenly chopped. Transfer to a bowl.
Repeat with remaining cranberries and orange slices. Stir in sugar.
Store in the refrigerator or freezer.
Makes about 3 cups.
Prepare this recipe days in advance, the flavors will enhance when marinated in the refrigerator.
