To make a hamburger is easy, grill fresh ground meat on the stove and serve immediately. Everyone loves a homemade burger, however grilling a burger at the end of a long day is not convenient. Opening the refrigerator at 8:00 p.m. and seeing a meat loaf is delightful, a meal will be ready in minutes. One meat loaf for my small family is an entrée for two meals and at least one sandwich during the week.
Preheat oven to 350° F. Place rack in the center of the oven.
Prepare a 4.5 x 8.5-inch bread loaf pan with a light coating of oil
1 pound buffalo or organic grass-fed ground beef
1 egg
1/4 cup bread crumbs or old fashioned rolled oats
1 tablespoon ketchup
5 or 6 olives, pimiento stuffed or pitted kalamata
1/4 cup onion, minced
1/4 cup Parmigiano Reggiano cheese, grated
1/4 cup parsley, minced
1 teaspoon pepper
1/2 cup water
1 tablespoon Worcestershire sauce
Place all ingredients in a large mixing bowl. Mix thoroughly. Pour into a small bread loaf pan.
Pat down into a loaf shape and add the olives for fun.
Bake for 30 minutes. The meat will shrink away from the sides of the pan.
Test to be sure the meat is fully cooked.
Tip
I recommend ground grass-fed buffalo or organic grass-fed ground beef.
The meat is lean and very tasty.
