Ingredients
Preheat oven to 350° F. Place rack in the center of the oven.
The dry ingredients
4 cups old fashioned organic oats
1 cup dried coconut flakes
1 tablespoon fennel seeds
1/3 cup flax seeds optional
1 cup nuts, almonds, walnuts or pecan pieces
1 cup raisins
1 cup sunflower seeds
1/2 cup sesame seeds
The wet ingredients
1/3 cup oil
2/3 cup honey
1/4 cup molasses
1 teaspoon vanilla
Heat the oil, honey and molasses in a microwave for 1 minute then add 1 teaspoon vanilla.
Combine the dry ingredients in a large mixing bowl. Separate the dried fruit and mix well.
Add the honey, molasses and vanilla. Continue to mix until well combined. Spread evenly on a parchment lined shallow baking sheet.
Bake at 325° for 20 minutes. Cool. Break into chunks and store in an airtight container.
Pack in a small plastic bag for breakfast or a snack.
