Broccoli

Broccoli is easy to prepare and a healthy addition to any weekly menu. Add to a quick stir fry, microwave, steam or serve raw with hummus. Yummy!

To microwave

8 x 8 x 2-inch glass baking dish

Place a large mixing bowl in the sink and fill with water.
Drop the entire head of broccoli in the water. Rinse, empty the water and rinse again.

Pull the florets apart and place in the baking dish. Peel the large center stalk and cut into rounds.
Add to the baking dish. Cover with a paper plate.

Cook in the microwave for 6 minutes. Turn the broccoli over and cook for another 6 minutes.

To steam

Add about 1/2  inch of water to a 2-quart sauce pan. Place a vegetable steamer in the bottom
of the pan. Add the broccoli. Cover with a lid. Set the stove to high and bring the pan to a boil.
Cook for 5 minutes for al dente, bright green and crisp. Cook for 8 minutes for darker green
and soft.

Variations
  • Season with sesame salt and serve.
  • Drizzle with 1/8 cup of olive oil, mix carefully. Sprinkle with red-wine vinegar, 2 teaspoons of red pepper, mix again and serve.
  • Mix 2 tablespoons of soy sauce with 2 tablespoons rice-wine vinegar, drizzle over broccoli, mix carefully and serve.
  • Serve raw with hummus.
