Ingredients

1/8 cup olive oil
4 garlic cloves, peeled and smashed
2 bunches of spinach, rinsed clean

1 teaspoon red pepper
1 teaspoon salt

Place a large mixing bowl in the sink and fill with cold water. Remove the ties that bind the spinach, and place in the bowl. Rinse. Drain the bowl, add water and rinse again. Place the spinach in a salad spinner and twirl away.

Heat a large skillet on the stove set to medium-high. Add the olive oil and one crushed clove of garlic. Add the remaining cloves of garlic when the garlic sizzles. Cook the garlic until fragrant and beginning to brown, about 1 minute. Add the spun-dried spinach to the skillet and cook until tender, about 3 to 4 minutes.

Season with pepper and salt.
