Cook spicy cauliflower in the microwave to save time then bake in a hot oven with a cornstarch and spice coating. Serve as a side dish or a snack. Also try versatile cauliflower raw with a dip, roasted with garlic, or mashed like a potato.
Ingredients
1 head of cauliflower, rinsed and chopped into pieces
1/4 cup olive oil
1 tablespoon cornstarch
1 teaspoon paprika
1/2 teaspoon black or white pepper
1/8 teaspoon salt
1 teaspoon of sugar
1 teaspoon sumac
1 teaspoon turmeric
Preheat oven to 400° F. Place rack in the middle of the oven.
Rinse a head of cauliflower in a large mixing bowl. Break or cut the florets apart and place the pieces in a 9 x 13 inch glass baking dish. Microwave for 6 minutes. Turn and microwave another 6 minutes. Discard the excess liquid. Cover the cauliflower with 1/4 cup of olive oil and mix until incorporated.
Place the cornstarch, salt, spices and sugar in a small bowl and blend together. Add to cauliflower and mix until well combined.
Bake for 10 minutes. Stir and bake for another 10 minutes. Cook the cauliflower to crisp on the outside and soft in the middle.
Serve hot or cold or add to a salad. Store cauliflower in the refrigerator.
