Red quinoa has a nutty flavor and a crunchy texture that is fun to chew. Rich in vitamins, minerals and high amounts of the amino acid lysine, quinoa is a gluten free, high quality source of protein.
Ingredients
1 cup of red quinoa, rinsed
2 cups water
1 teaspoon salt (optional)
Rinse the quinoa before cooking and place in a medium-sized saucepan. Add the water and salt and bring to a boil. Cover the saucepan and lower the heat to a simmer. Cook until the water absorbs, about 15 minutes. Remove from the heat and let rest for five minutes before serving.
Serve with sesame salt.
Tip
Cover the lid of the saucepan with a clean kitchen towel and place back on the pan upside down. This will absorb any liquid that could drip to the stove.
